
Another breakfast meal prep idea, here’s what you need:
- 10 eggs
- 1/2 cup shredded cheese
- 1-2 cups @bwqualitygrowers watercress
- 6 slices American cheese
- 6 English muffins
- 6 pre-cooked sausage patties (DM “sausage recipe” if you’d like my DIY breakfast sausage recipe
- Olive oil
- Salt and pepper
How to make it:
1. Preheat oven to 375 degrees.
2. In a large bowl, crack 10 eggs and add and season with salt and pepper. Whisk well and set aside.
3. On a 9x13” sheet pan, brush with olive oil then layer your ingredients: watercress, eggs, cheese.
4. Place the sheet pan into the oven to bake for about 20 minutes.
5. Once the egg is cooked through, remove from the oven and slice into 6 squares.
6. Assemble the sandwich by slicing an English muffin in half, add an egg square, and top with sausage patty and cheese.
7. Close the sandwich and wrap in a paper towel or parchment paper. Store in the freezer for up to 3 months or serve immediately.
Note: to reheat, unwrap the sandwich and place it into a damp paper towel. Microwave for 2-3 minutes and enjoy!
