Step 1: Don't Skip the Drying
A lot of people skip thoroughly drying their fish before cooking, and it makes a huge difference to the final product.
It's really easy— just use a paper towel to pat dry every side of your fish before cooking.
Step 2: Season From High Up
All sides of your fish should have even seasoning (skin, too), and the best way to do that is to sprinkle on your seasonings from higher up.
Just lift your hand a foot or two from your fish, and you'll be good to go.
Step 3: Use the Right Cooking Method
It's really easy to overcook fish, and then you're left with a super dry mess. To fix this, lay your fish skin-side-down in a pan heated with some oil, and then use a spatula to gently press it down.
Let that cook undisturbed until it's about 90% done. If you're not sure, look at the side of your fish and watch the color lighten as it cooks. It's a good indicator.
Flip, and finish cooking for the last 10 seconds or so before removing from the heat to rest.
Step 4: Pick the Right Pairing
What you serve with your protein definitely matters for a great, well-rounded meal. For salmon, a fresh, lemony salad is exceptional.
Toss your favorite greens with a little good olive oil and fresh lemon juice, and then top with your salmon for a great bite.
I promise, if you follow these steps, you'll never want to waste your money on restaurant salmon again.
