
As a customer, you've got to remember that the meals being offered have taken countless hours to perfect before making it to the menu. Every ingredient, from the protein to the spices, is included for a reason.
When you try to recreate an item just because you've decided you don't like it, it's insulting to the people who spent so much of their time crafting that recipe.
Now, if you're allergic to something, or just want to remove an item or two— that's not a big deal, and it's not what I'm talking about.
I speak for most chefs when I say that we take pride in what we do, and we never want to serve something that doesn't meet our standards.
If your request means compromising our values as chefs, you're going to be told no. If that pisses you off, then there are plenty of DIY places you can eat at instead.
