
Everything has to do with the timing. If the shea seeds are picked early in the season, they tend to produce a more buttery-yellow colored shea butter, whereas if they are picked later on in the season, the shea butter tends to be lighter in color.
Mineral content of the soil and the climate also play a big role in the slight color variations.
Not to worry though! All the amazing properties of shea butter are not affected by this, and your products will still turn out amazing!
