RED LENTIL SOUP
Ingredients:
2 cups red lentil
1/2cup rice
1 onion or and croutons
1/2cup lemon juice
Salt, pepper to taste
Method:
Wash lentil until clear water runs. Add lentil in cold water and boil till opens up and softens. May need a little bit more water if boiled without a lid. Collect foam from top. Add washed rice and continue to cook with lid ajar on medium heat till both cooked. Add lemon and salt. Turn heat to minimum. Fry chopped onion in preferred oil till brown and releases aroma. Add black pepper and onion to soup. Give it a stir. Remove from heat. Serve with chili pepper and with more lemon juice if you like. It is supposed to be a very lemony soup but can adjust the flavourings according to your taste.
STUFFED PEPPERS
Ingredients:
400 hundred grams vegan or any fine mince
Any or mixture of red ,yellow ,green small capsicums
1 large onion
3/4 cup rice
Bunch of parsley
2 ripe tomatoes if in season or
1 can of chopped tomatoes
Juice of 2 lemon
2 tbsp of sweet paprika
1 tsp of dried chili pepper flakes if like
1 extra onion
Method:
Cut the tops and clean the inside of the capsicum. Sit in a dip oven tray. Lightly cook minced meat in preferred oil. Add chopped onion until it softens a bit. Add sweet paprika, stirr another minute, add chopped tomatoes and cook for a further minute. Add washed rice, cook and stir for a minute. Turn off heat and add salt, lemon juice, black pepper and chilly pepper flakes (can add other flavourings if like) for taste. Finally stir in chopped parsley and leave it to cool. Cut onion half way to middle. Boil in water for 5 min. or till soft enough to separate each layer. Cool and separate layers. Spoon fill capsicum and onions. Add water, mixed with a little vegeta and salt or other flavourings (maggi or continental) to come up to 2/3of the capsicums. Cover with foil or lid. Put in a previously warmed oven to 200 degrees celsius. Once it boils, bring the temperature down to 180 degrees and cook for 30-45 minutes or till rice is cooked. Take off the cover and bring heat down to 160 degrees cook till most of the juices evaporated and reduced to a nice flavour. (An inch of juice left is sufficient).
RICE PUDDING
Ingredients:
1lt milk (any milk)
5 tbsp of rice
5 tbsp of sugar
Powder cinnamon
Warm milk. Add rice, bring to boil and simmer without lid till rice is cooked and milk is absorbed.. Add sugar. Continue simmering till sugar is dissolved. Taste and add more sugar if desired. Serve with a generous sprinkle of cinnamon on top of rice once served into bowls. Allow the pudding to be a bit more soupy-runny if it is not going to be served while warm. It will become more solid as it cools down. To give it an extra creamy taste, you can add thickened cream once the rice is nearly cooked and boil a little further till it is absorbed. As always, more or less milk, sugar or cream can be adjusted according to your taste.
