1. Work Great but Horrible to Clean:
Does using a fryer speed up the cooking process? Yes. Is it a giant pain in the @ss to clean at the end of shift? Also, yes.
2. Cooks Fast but at Different Temps:
There is no one size fits all when it comes to frying and a lot of people don't know that. Things cook for different times at different temps.
3. Great Taste but Only when Done Right:
I love fried foods, but when I can taste the oil that means that the fryers aren't being used correctly. I hate that.
Fryers are great, especially when it comes to quicker food turnaround times, but they aren't perfect. You've got to use them right.
