6 large bell peppers (any color)
1 pound lean groound beef (at least 80%)
2 tablespoons chopped onions
1 cup cooked rice
1 teaspoon salt
1 clove garlic, finely chopped
1 can (15 oz) tomato sauce
3/4 shredded mozzarella cheese
To make lighter stuffed green pepper (190 calories)
substitute ground turkey breast for the grounf beef and used reduce fat cheese
Vegetarian stuffed peppers
Instead of ground beef subsitute 1 package (12 oz) frozen veggie srumbles (thawed). Omit onion. In a 10 inch non-stick skillet cook veggie crumbles, rice, salt, garlic, and 1 cup tomato sauce over medium heat, stir occasionally, until hot. then follow the other steps in my video.
