Ingredients -
✓ 1 kg red carrots, grated
✓ 1 liter full fat milk
✓ 3 tbsp ghee
✓ 1 cup granulated sugar, can vary based on the desired sweetness
✓ 1/2 cup grated khoya
✓ 3/4 tsp cardamom powder
✓ Slivered almonds and pistachios, for garnish
Method-
Peel and grate the carrots. (use the thicker side of the grater).
Heat ghee in a pan and sauté the carrots on a medium high flame for around 10 minutes, until you see the colour of the carrots turning orange.
Now, add in milk and continue to cook till the carrots absorb all the milk. Stir occasionally.
Once, most of the moisture is absorbed, add in sugar, cardamom, khoya and mix well. Keep stirring constantly.
Mix in the nuts and keep cooking till the halwa leaves the sides of the kadhai.
Remove and serve hot!
