Now that the weather is getting chilly, nothing beats a big bowl of soup, we love soups here in our house, and this ROASTED TOMATILLO CHICKEN SOUP WITH BEANS is a true winner. Tomatillos can be used in so many different ways, and I have combined them with some roasted poblano peppers and cannellini beans making this soup hearty and absolutely hit the spot delicious. Using freshly ground spices and freshly grated Monterrey jack cheese takes this soup to a whole different level. This hearty soup can be served with corn tortillas or with crispy corn tortilla strips like we like it. I hope you give my recipe a try and enjoy it. ❤️

BOIL CHICKEN __________
2 lb. Split chicken breast bone in
1 celery rib
1/4 small onion
Small bunch cilantro
Salt and pepper
Water

ROAST_________
1 lb. Tomatillos
2 poblano peppers
1 Serrano pepper (optional )
1/4 small onion
4 large garlic cloves

GRIND__________
1 tsp whole cumin
1 tsp whole peppercorn
1/2 tsp Mexican oregano
1/2,C. Water

BLEND________
Roasted Ingredients
1 1/2 Tbsp chicken bouillon
Small bunch cilantro
1 C. Chicken broth

Saute________
1/2 C. ONIONS (julienned )
1 Tbsp vegetable oil

ADD___________
2 C. Diced tomatoes
1/2 tsp sugar
Salt
2 Cans 15.5 oz Cannellini beans

Extras____________
Freshly grated Monterrey jack Chese
Tortilla chips
ARROZ BLANCO MEXICANO
