
1. Prepare the filling by combining ricotta cheese, tomato sauce (I prefer homemade), and freshly shredded mozzarella cheese. Mix that well and set aside.
2. Lay out your egg roll wrapper, add a slice of provolone cheese, about a tbsp of your filling, and top with a few slices of pepperoni.
3. Put a little bit of water on all four corners of your egg roll wrapper and start to roll. Fold in the corner nearest you, then the ones to either side and continue rolling until you're left with a tight packet.
4. Preheat your oil to 350º and carefully drop in your rolls. Fry for 8 minutes.
5. Place on a wire rack or paper towel to cool for a minute or two, slice in half, and you're ready to eat.
These are some of my favorite snacks to make at home. You'll never want to buy Hot Pockets again.
