
1. Make the Sauce:
Add mayo, sriracha, Bangkok shrimp spice, salt, sugar, red pepper flakes, paprika, garlic powder, onion powder, a little rice vinegar, and a little soy sauce to a bowl and whisk until combined.
Mix in a handful of walnuts and stick it in the fridge.
2. Prep the Shrimp
Add peeled & deveined shrimp to a bowl and toss in corn starch and Bangkok spice. In another bowl, whisk together 2 eggs, a little Bangkok spice, and sriracha.
Make sure your shrimp are fully coated with your corn starch mixture before dunking in your egg wash. Fry at 350º for 40 seconds or so.
Sprinkle your shrimp with more Bangkok spice right out of the fryer, and then gently fold them into your sauce.
3. Assemble the Sandwich
Get a good, soft bun and top with crisp lettuce before piling on your sauced shrimp, before digging in.
