BETH'S CRISPY YET CHEWY GAUFRE RECIPE
Makes 6-8 Gaufres depending on Size

Ingredients:
1 ½ cups (360 ml) milk
3 eggs
1/4 cup (60 ml) melted butter
2 tsp (5 ml) vanilla extract and/or 1 vanilla bean
3 tbsp (39 g) sugar
2 tbsp (30 ml) veg oil
1 3/4 (258 g) cups flour
1 3/4 tsp (7 g) baking powder
¼ tsp (a large pinch) salt
For Serving:
1/2-1 cup Nutella
Whipped Cream (store-bought or homemade)
My Homemade Whipped Cream Recipe:
2 cups (480 ml) heavy cream
2 tbsp (14 g) powdered sugar
1 tsp (5 ml) vanilla extract
Method:
In a large bowl, whisk together the eggs, milk, melted butter, vanilla, sugar, and vegetable oil until combined, then set aside.
In a medium-sized bowl, whisk together the flour, baking powder, and salt. Place the fine mesh sieve over a bowl and sift the flour mixture into the wet mixture in thirds, whisking in between each addition.
Cover and refrigerate the batter overnight.
Then, heat a waffle iron according to your manufacturer's instructions.
Meanwhile, place a pot of water, about 3 inches deep, over a high flame to get the water simmering. Then, reduce the heat to your cooktop's lowest setting. Fill a heat-safe bowl with 1/2 cup of Nutella and stir it with a fork until loose and drizzling.
For the homemade whipped cream: Combine all ingredients in a bowl of a stand mixer and whip on high until stiff peaks form. Transfer it to a pastry bag fitted with a star tip and pipe rosettes on top of your baked waffle.
Then, lightly grease the iron with vegetable oil. Ladle in the batter, allowing gravity to spread it. Do not add too much, or it will overflow.
Cook the waffle until golden brown and crispy. Drizzle it with a fork dipped into the Nutella. Top with rosettes of whipped cream and enjoy!
