Let's make this easy and delicious buffalo chicken sandwich. 

Step 1: Make the Buffalo Sauce
Melt a stick of butter over low-medium heat. Add Tapatio or similar along with salt, pepper, a Texas-style hot sauce of your choice, and a little Tabasco. 

Bring that to a simmer and remove from the heat. 

Step 2: Make the Chicken
Brine some chicken thighs in pickle juice for a few hours. Create a batter with flour, paprika, garlic powder, onion powder, cayenne, curry, turmeric, salt, pepper, and a little thyme. Finish with a little buttermilk so you have a mostly dry, lumpy batter. 

Fully coat your chicken thighs before frying in 350º for about 4-5 minutes. Right out of the fryer, drench your chicken in your homemade buffalo sauce. 

Step 3: Assemble the Sandwich
Spread a mixture of blue cheese and ranch on the bottom half of a fresh, seeded bun. 

Top with crisp lettuce, finely-shredded celery, your chicken, pickles, and a drizzle of your dressing mixture. Sprinkle on a few more celery seeds and dig in.
