Today, I’m making one of my all-time favorites: tamales de rajas con queso! 😋 These tamales are incredibly easy to make and absolutely delicious. Perfect for any occasion, but especially during the holidays like Thanksgiving and Christmas. Pair them with a hot cup of coffee, champurrado, or chocolate abuelita to stay cozy in this chilly weather. TAMALES DE RAJAS CON QUESO INGREDIENTS:
For the masa:
► 1 1/2 cups lard
► 2 tsp salt
► 5 tsp baking powder
► 6 cups masa (I'm using Maseca for Tamales)
► 4 cups chicken broth
► 2 cups of water (add more if needed)
For the tamales:
► Some corn husks
► Monterrey Jack cheese (or cheese of choice)
► Canned jalapeños
► Fresh jalapeños (optional)
