This smoky salsa, referred to in Mexico as salsa Tatemada, is a rich blend of chilies, tomatoes, garlic, and onion, all expertly mashed together in a molcajete, which is a traditional mortar and pestle. The ingredients can be charred over an open flame or on a griddle, and once mashed, it can be garnished with diced avocado and a sprinkle of salt if preferred. It's an ideal topping for tacos, breakfast eggs, or nearly any dish.

INGREDIENTS-------------------------
5 Large Roma Tomatoes
3 Serrano Peppers (can use seedless jalapeños)
2-3 Large Garlic Cloves (i used 2 xl)
1/2 Small Onion (broken apart)
Salt as needed
Chopped Cilantro (optional)
1/4 C. Water
1 Medium Avocado for topping (peeled and cubed)

Extras--------------------
6 Thin loin chops
Salt & pepper
Refried beans
Corn Tortillas
●TIPS ______________
•You can roast all ingredients on griddle or a skillet if you'd rather do that
•You can remove seeds from Peppers if you don't want heat
• you can add you're favorite pepper for heat
