I don't waste food often, but there are definitely times I will refuse to serve it to a guest.
Consistency is everything in this industry, so I will never be okay with serving my guests something that I'm not proud to say I made.
Around here, though, food rarely makes it into the garbage. If it's not high quality enough to be served, someone on the team is more than happy to take it, myself included.
Businesses contribute to so much food waste and it absolutely needs to stop. You can still keep your quality and consistency high without tossing perfectly good food.
Trust me. I do it every single day.
