Here's how to make fish & chips two ways.

Dry Battered Fish:
Make sure your fish filets have been patted dry. 

Using a fish fry breading (Zatarain's or something similar), fill coat your fish, making sure to really pat it in before adding the breaded filets to your fryer. 

Remove to a wire rack, and immediately sprinkle both sides with Old Bay seasoning. 

Dip in your favorite tartar sauce (you know I'm always going to go with homemade) and enjoy. 

Wet-Battered Fish:
Firstly, add your dry ingredients to a bowl: flour, baking powder, salt, pepper, paprika, and Old Bay.

Next, add a little oil, rice vinegar, and water. Whisk this well until you have a really loose, light batter. 

Pat your fish filets dry before coating them well in flour, and dunking them into your wet batter. Add those right into the fryer. 

Remove to a wire rack, and immediately season with more Old Bay. 


I know some people have strong feelings about what the "proper" method is, but if you're the one cooking, make it the way you prefer. 

No matter what, you're going to have a great meal.
