Ingredients:
2 lbs chuck pot roast
1 Anaheim pepper
1 ancho pepper
3 New Mexico or guajillo pepper
1/2 onion
1/2 head of garlic
1 roma tomato
1 tbsp salt
1 tbsp black pepper
1 tsp whole cumin
4 bay leaves
4 cups instant corn masa
Your choice of melting cheese, Oaxaca or Monterey Jack
