THE LEGENDARY OLD RECIPE OF STEW LIVER, WHICH QUEEN KATERINA MEDICI LOVED SO MUCH, SIMPLY COOKING, TRY IT!

WE TAKE
🔹chicken liver 500 gr
🔹 onion 1 head
🔹 garlic 2 cloves
🔹 lemon juice 1/2
🔹 chicken yolk 2-3
🔹chicken broth 100-200 gr
🔹 cream 100 gr (optional)
🔹 flour 1 tbsp
🔹butter 20 gr
🔹 vegetable oil 1-2 tbsp
🔹 salt, dry garlic to taste

WE DO:
✅ wash the chicken liver and cut into convenient pieces, removing all the films along the way
✅ cut the onion into half rings, finely chop the garlic
✅ separate the yolks from the proteins, mix with the juice of half a lemon and warm broth so that they do not curdle when stirred
✅ pass the onion and garlic in vegetable oil for 2-3 minutes, add butter and flour - mix
✅ add the liver to the stewed onion and fry until cooked for 20 minutes (the time depends on the size of the pieces)
✅ fill the liver with sauce of yolks, lemon juice and broth
✅ for a creamier taste, I add a little cream, salt to taste, add dry garlic for flavor and mix, cook for 1-2 minutes until thick

Serve with lemon wedge and crispy toast
