This is how you can make Lemon Garlic Chicken Over Rice for your entire family for under $10.

Ingredients:
- Chicken (cuts of your choice)
- Whole Garlic
- Whole Lemons
- Potatoes
- Rice
- Assorted Spices

1. Marinate the Chicken
Mince your garlic and cut your lemons into quarters. Add your chicken to a bowl along with the minced garlic. Squeeze your lemon wedges over the chicken before adding the wedges to the bowl.

If you have these spices in your pantry already, add them, too: salt, pepper, cinnamon, cumin, crushed red pepper, and some olive oil. Cover your bowl and let those flavors marry.

2. Prep & Powder Cook the Potatoes
Peel and slice your potatoes and let them soak for a few minutes in cold water.

Add them in a single layer to a sheet pan and sprinkle with olive oil, salt, and pepper. Power bake these at 350º for about half an hour.

3. Bake the Chicken
Give your chicken and marinade a good mix. Remove your potatoes from the oven, add your chicken on top, and pour in a little water. Cover with tin foil and bake at 350º for an hour.

After the hour is up, remove the tin foil and broil for 10 minutes to crisp up the skin.

4. Cook the Rice
Use whatever rice you like best for this recipe. Wash it well and steam or boil until tender and fluffy.

5. Plate and Enjoy
Add some rice to each plate before adding your chicken and potatoes. Be sure to spoon on some of that flavorful sauce at the bottom of the pan.

Cooking on a budget is absolutely doable, especially when you keep things nice and simple.
