Vegetable salad - side dish
4 eggplants
2 peppers
2 zucchini
4 tomatoes
3 cloves garlic
a good bunch of herbs (basil, parsley, dill, cilantro)
salt to taste
vegetable oil for frying
Cut all the vegetables into small slices and fry in oil until golden brown. Finely chop the greens and mix with grated garlic.
Lay out all the vegetables in layers, sprinkling with herbs and salt (to taste).
This is a very aromatic and tasty vegetable side dish.
