
MAKE AHEAD BREAKFAST SANDWICHES
Ingredients:
8 English muffins
1 cup Shredded cheese 🧀
12 eggs
1 cup ham, diced
1 cup baby spinach, chopped
1 cup mushrooms, chopped
8 Canadian bacon, sliced
8 American cheese, sliced
Salt and Pepper, to taste
Instructions:
1. Preheat oven to 375 degrees.
2. In a large bowl, crack 12 eggs and add 1/4 milk (or cottage cheese) and season with salt and pepper. Whisk well and set aside.
3. On a 9x13” sheet pan, brush with olive oil then layer your ingredients: spinach, mushrooms, diced ham, cheese.
4. Place the sheet pan into the oven to bake for about 20 minutes.
5. Once the egg is cooked through, remove from the oven and slice into 8 squares.
6. Assemble the sandwich by slicing an English muffin in half, add an egg square, and top with Canadian bacon and cheese.
7. Close the sandwich and wrap in a paper towel or parchment paper. Store in the freezer for up to 3 months or serve immediately.
Note: to reheat, unwrap the sandwich and place it into a damp paper towel. Microwave for 2-3 minutes and enjoy!
