SUGGESTED SERVINGS FOR RACLETTE:
For 4 people

4-5 small Yukon gold potatoes (per person)
(peeled and boiled until tender)

6-8 slices of charcuterie (per person)
-Rosette de Lyon
-Proscuitto or Spanish Ham
-Spicy or mild Chorizo

4-5 slices Raclette Cheese Per Person
(Any flavor)

1 small bowl cornichons
A few marinated onions or small corn cobs

3-4 mushrooms per person, sliced in half and threaded on a 6" skewer
Olive oil, Salt and Pepper, Herbs de Provence to taste
