Here is the Ultimate Potato Guide so you know which potatoes you should be using and when.
1. Russet Potatoes:
These are some of the starchiest, so they're great for baking, frying, and mashing. This is what I use for our Garlic Cilantro Fries.
2. Yukon Gold Potatoes:
The moisture content in these potatoes allows them to hold up better in soups without turning into mush. These are all-purpose potatoes and can be used in many different ways.
3. Red Skin Potatoes:
These are some of my personal favorites because of their taste and texture. Great for mashing, roasting, and potato salad.
4. Fingerling Potatoes:
Probably the best skin-on potatoes and perfect for roasting.
5. Sweet Potatoes:
A very nutritious option and great in all kinds of recipes like baking, mashing, or boiling.
6. Yams:
No, these are not the same as a sweet potato. They are not as sweet and far starchier and firmer than a sweet potato. They are great for frying and boiling.
Knowing the difference between these potatoes means that you know more than 80% of what you need to know when it comes to potatoes.
