Restaurants do not need to have vegan meat on their menus. In my opinion, having "imitation meats" as your only vegetarian or vegan options is just taking the lazy way out so you don't have to try to make a really good meatless option for your guests.
Having vegetarian/vegan options on your menu is great, but put some thought and time into it rather than just buying the fake meat or having only salads.
As chefs, we need to do better than that.
