I always thought that roasting a whole chicken was difficult until this recipe. With just a few steps, you will have a delicious, moist chicken with that crispy skin that we all love. And all this in less than 2 hours! The butter, herbs and garlic blend very well and the lemon juice takes it all to a whole other level. I hope you enjoy this recipe. Happy cooking!!!!

***INGREDIENTS***

* Whole chicken-1
* Butter - 250g
* Fresh thyme
* Rosemary
* Garlic - 2 heads
* Salt
* Black pepper
* Olive oil / Vegetable oil
* Potatoes - 1kg
* Carrots - 3
* Onions -2
* Lemons - 3

Serves about 4 - 5 plates
