Step 1: Prepare the Chicken
Ingredients:
- (6) boneless, skinless chicken thighs
- Salt
- Brown sugar
- Baking powder
Start with salt-curing your chicken thighs by placing them on a wire rack and sprinkle on some kosher salt, light brown sugar, and baking powder on one side. Flip and repeat on the other side. Let chill in the fridge for a minimum of (4) hours but preferably overnight.
Step 2: Make the Sauce
Ingredients:
- (2 cups) mayo
- (1) garlic clove
- (1/2) lemon
- (1/2 tsp) celery seeds
- (1 tbsp) chopped dill pickles
- (2 tsp) pickle juice
- Salt
Into a bowl, add your mayo and a pinch of salt. Grate your garlic clove using a zester before adding the juice of half a lemon, celery seeds, chopped dill pickles, and some of that pickle juice. Mix this up well and let those flavors marry while you cook your chicken.
Step 3: Drench the Chicken
Dry Ingredients:
- (3 cups) flour
- (1 tbsp) salt
- (1 tsp) celery seeds
- (1/2 cup) smoked paprika
- (1/4 cup) cayenne
- (1 tbsp) black pepper
- (1 tbsp) garlic powder
Wet Ingredients:
- (2) eggs
- (1/4 cup) buttermilk
- (2 tbsp) pickle juice
- (1 tbsp) hot sauce
Into a large bowl add flour, salt, smoked paprika, cayenne, black pepper, and garlic powder and whisk everything together. In another bowl make your egg wash by combining (2) beaten eggs, buttermilk, pickle juice, and hot sauce.
Fully coat each chicken thigh with your flour mixture, gently shake off the excess, and set them aside. Create a batter station with your floured chicken first, followed by your egg wash, and then your seasoned flour. Add a couple of spoonfuls of your egg wash to your flour and hand-mix it until you see small clumps forming. This will ensure you have extra crispy fried chicken.
Drench your floured thighs into the egg wash first and then into your flour, making sure to fully coat every piece.
Step 4: Fry the Chicken
Ingredients & Tools:
- (1) dutch oven or large pot
- Neutral frying oil (enough to fill halfway
Fill up your pan/pot halfway with a neutral frying oil and get it heating to 350º. If your oil is too hot, your batter will burn but your chicken will stay raw. Not hot enough and you’ll be left with chicken that tastes like the oil it was fried in. Trust me, it’s worth investing in a kitchen thermometer.
Once your oil is at 350º, slowly and carefully add your chicken but don’t overcrowd your pan. Fry these for 5-8 minutes or until your internal temperature is between 175º-180º. Remove your fried chicken to a wire rack to drain and repeat this process until all of your chicken is fried.
Step 5: Assemble the Sandwich
Ingredients:
- (6) buns grilled with mayo
- (1 jar) bread and butter pickles
- Homemade sauce
Get yourself some good hamburger buns, cut them in half, and spread the interior with mayo. Grill these in a pan until they’re golden. Add some of your homemade sauce and add it to the top and bottom bun. Add a few pickles onto one side of the sauced bun, add your chicken, and top with the other half of your bun.
