
Today I’m going to be sharing with you how to make the best chilaquiles!!! But this time we going to take it to a whole new level, actually this is the way my mom eats her chilaquiles because she don’t like them fried 😅 hope you enjoy them because they are seriously the best!!!! And let me tell you, I had Lewis pick up some epazote and he came home with a bunch of spare mint 😭😭😭 so I couldn’t use it but use it if you can and want 😉 the salsa is delicious as is 🙂

Ingredients:
Eggs
15 corn tortillas
2 cups pinto beans with 1/2 cup it’s broth
8 oz Chorizo
Cheese I’m using Oaxaca, Mexican blend
1/2- 1 cup oil
Butter
Epazote (optional)
3 guajillo or New Mexico chile pods
12 -15 Chile de árbol (add less for less spicy)
6 tomatillos
2 tomatoes
2 garlic cloves
1/4 onion;sliced
salt I used 2 1/4 tsp
