The production starts with cleaning the sesame seeds, followed by mixing them with sugar and syrup in precise proportions. This mixture is cooked into an elastic mass, then cooled and manually formed into large sheets.
These sheets are cut into flakes on an automatic line, cooled in a tunnel, and sorted into packs. Chocolate-covered variations are particularly popular among younger consumers.
Halva, another product from Unitop, features tahini paste imported from Turkey. The paste is mixed with caramel, whipped egg whites, and soapwort root to achieve its light, fluffy texture. The mixture is processed traditionally and portioned into blocks, which are hand-wrapped in parchment paper and then automatically packaged.
