Bonjour!
The recipe I used for this brioche is by Hervé Cuisine @hervecuisine
Ingredients:
500g flour
80g butter
80g sugar
200ml milk
pinch of salt
1 bag of instant yeast (7g)
3 eggs
all at room temperature
Mix the sugar, milk, 2 eggs, sugar and salt in the bowl of your KitchenAid but use a hand mixer first to just mix these wet ingredients. Then add the flour and mix it shortly using your KitchenAid this time just a few seconds. Then add the yeast and mix for 6 to 7 minutes at low speed. Increase the speed and mix for another 5 minutes. Then add the butter in cubes and mix at low speed for 8 minutes. Cover with plastic wrap or a wet tea towel and set aside to rise for 90 minutes. After this rising time, press the air out of the dough using your fingers. Transfer the dough to a floured surface and cut into 8 pieces. Form 8 little balls and put them in a greased baking mold / tin. Set to rise for 45 minutes. Pre-heat your oven to 180 Celsius. Mix the third egg with a pinch of salt and brush this on top of the brioche. Bake in the oven for 30 minutes.
