Unwound 3rd String: Does it make a difference in these delta blues songs?

After recording a tutorial for BGI Premium Members on Hard Time Killing FLoor Blues by Skip James, one think irked me...

I was pretty sure the tune was recorded with an unwound (plain) third string but I recorded the lesson with a wound third string.

I wondered if there's any real difference between the two and if so, is it too subtle to care about. This video is a comparison of the two types of strings on a snippet of Hard Time Killing Floor Blues and a fun one from Charley Patton....Green River Blues.

What do you think? Is there a difference? Does it matter?
