The goal is that you can spear a clove of garlic with the tip of your knife and it will pop free of the bulb and skin.
Honestly, I don't think this was made for fresh garlic. Fresh garlic is sticky, which is why you have to take time to peel it.
If you ask me, my method of soaking the cloves to make them easier to peel is more reliable.
