This was a 1.21 challenge on the latest version of Minecraft in survival. Entities are all riding chicken's unless they are unable to. Yes it's incredibly silly. I went and saw the Minecraft movie in a theatre full of people, and it gave me this idea. Jockey doesn't even sound like a word anymore. Hope you enjoy Chicken Jockeys.
