That’s when I decided to make Chicken Schnitzel. It’s one of those dishes that feels indulgent, like takeout, but is surprisingly easy to make at home. Plus, it packs in protein.
Getting Started: The Prep
I began with chicken fillets, carefully flattening them with a rolling pin. My son sat nearby, bundled up in his blanket, watching me with mild curiosity. Flattening the fillets is oddly satisfying—it ensures they cook evenly and stay tender inside.
