The Art of Slow Living in the Village: Preserving Vegetables for the Winter. New furniture

Welcome to simple rural life. The last month of summer is left, and we are starting to prepare for the long winter. The season of preserving and making marinades for the winter is open. In this video, you will see two recipes for canned vegetables: sweet and sour pickled cucumbers and squash caviar, which my mother loves so much. We will also visit a small furniture manufacturer and order a wooden kitchen for our Forest House. 'Cucumbers with mustard' Put the following on the bottom of a 1.5 liter jar: carrot - 1 pc. (small); garlic - 1 clove; dill - 1 umbrella; cloves - 3 pcs.; bay leaf - 1 pc.; mustard seeds - 1 tbsp.; black peppercorns and allspice (optional) - 3 pcs. Marinade: for 1.5 liters of water: 250 g sugar; 2 tbsp. salt; 125 g vinegar. Put the cucumbers tightly into the jar, sprinkle mustard on top, pour in the marinade. Sterilize over low heat for 15 minutes after the water boils. Roll up the lid. This recipe makes delicious sweet and sour pickled cucumbers. Zucchini caviar (my mom's recipe) Zucchini - 3 kg, carrots - 4 pcs., onions - 3 medium-sized heads, vegetable oil - 1 cup (250 ml), tomato paste - 5 tbsp., salt - 2 tbsp., sugar - 8 tbsp., garlic - 1 head (I did not add), black pepper - 1/3 tsp., red pepper - 1/4 tsp., vinegar - 9% 4-4.5 tbsp. to taste. Salt and sugar can also be adjusted to taste, I left it as in the recipe. Chop all the vegetables, add all the spices and oil, except vinegar. Put on the stove to cook, cook for about 20 minutes after boiling. Beat everything with a blender and leave to cook for about 1 hour or 1 hour 10 minutes. At the end, add vinegar, put into sterilized jars and roll up the lids. Turn the jars upside down and wrap them in a blanket. Leave them like this until they cool.
