Ingredients:
- 200g salmon fillet, diced
- 200g pasta of your choice (spaghetti, fettuccine, or penne)
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- ½ cup pasta water (reserved from boiling pasta)
- 1 tsp dried oregano
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ cup Parmesan cheese, grated (plus extra for garnish)
- 2 tbsp olive oil
- Fresh herbs (parsley, basil, or dill) for garnish
Instructions:
1. **Cook the Pasta**
- Start by boiling your pasta in salted water until al dente. Reserve ½ cup of the pasta water before draining, as it will help create the sauce later. Set the pasta aside while you prepare the sauce.
2. **Sauté the Salmon**
- Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the diced salmon and cook for about 3-4 minutes per side, or until the pieces are golden brown. Remove the salmon from the pan and set it aside.
3. **Cook the Cherry Tomatoes**
- In the same pan, add the halved cherry tomatoes. Sauté them over medium heat, stirring occasionally, until they soften and start to break down. This will take about 5 minutes and will give your sauce a lovely sweet and tangy base.
4. **Make the Cream Sauce**
- Lower the heat and pour in the heavy cream, stirring gently. Add the reserved pasta water a little at a time to loosen the sauce to your desired consistency. Season the sauce with salt, pepper, and oregano, adjusting to taste.
5. **Add the Parmesan Cheese**
- Stir in ½ cup of grated Parmesan cheese, letting it melt into the sauce. This will make the sauce thick, creamy, and packed with flavor.
6. **Combine Everything**
- Toss your cooked pasta into the sauce, ensuring every strand or piece is coated. Gently fold in the sautéed salmon and mix until everything is well combined.
7. **Garnish and Serve**
- Plate your creamy salmon pasta and finish with a sprinkle of extra Parmesan cheese and your choice of fresh herbs. Parsley adds freshness, while basil or dill complements the salmon beautifully.
