Fried Zucchini Flowers:
Fried zucchini flowers are a completely new dish for me. After searching for a recipe online, I made a simple batter.
I simply mixed soda water and flour until the consistency was halfway between thin pancakes and fritters, and added salt to taste. I separated the zucchini flowers from the green part and the core, dipped each flower in the batter, and fried them in oil until golden brown. It was amazing! Enjoy the unique taste.
🥧Blueberry pie with cottage cheese filling:
Dough:
• Egg - 1 pc. + 1 yolk
• Sugar - 4 tbsp.
• Salt - 1/4 tsp. (or a pinch)
• Flour - 230 g
• Baking powder - 1 tsp.
• Butter - 100 g
Filling:
• Cottage cheese - 250 g
• Sugar - 7 tbsp.
• Sour cream - 4 tbsp.
• Eggs - 1 pc. + protein (the yolk went into the dough)
• Corn starch - 3 full tbsp.
• Vanilla extract
• Berries (I have blueberries) - 300-350 g
PREPARATION:
Mix flour + baking powder + soft butter. Rub into crumbs.
Add sugar and eggs to the crumbs. Knead the dough.
Place the dough on the pan, make the sides. Put the pan with the dough in the refrigerator while the filling is being prepared.
Mix all the ingredients for the filling, except for the berries, beat with an immersion blender until smooth. Add the berries to this mixture. I used blueberries. If you have soft berries, put them on the bottom of the dough and pour the curd filling over them.
Bake at 180°C for 35-40 minutes. Since I have a ceramic pan, I put the pie in a cold oven. The cooking time increased. Bake until the dough is golden brown.
Remove the pie from the oven and let it cool completely. If you put the pie in the refrigerator for a few hours, it will taste even better.
