Best Blintzes (Crepe) ever. The most successful recipe 🥞

🔹 2 eggs
🔹 0.5 liters of milk
🔹 2 tablespoons of sugar
🔹A pinch of salt
🔹 A cup of flour - 200 gr
🔹 2 tablespoons of vegetable oil
Beat 2 eggs with sugar and salt with a whisk . Add milk and mix. Add flour by portions and each time mix well so that there are no lumps. Add 2 tablespoons of oil and the batter is ready.
I recommend leaving it for 10 minutes to rest before frying. During this time gluten absorbs liquid, this helps the blintzes to be much more elastic. The batter should be liquid.
Heat a pan, oil it for the first time. Pour the batter (3/4 soup ladle of the batter is enough for a 26cm pan) and spread quickly on the surface of the pan.
The frying is really short, a few seconds, when the edges are golden it is a sign to turn to the other side. A few more seconds and everything is ready. From this quantity you get about 15 Blintzes.
If during the process the batter becomes thicker, you can add milk or water.
Blintzes can be served with jam, sour cream, honey, smoked salmon.
