Ingredients:
• Meat — 1.5 kg
• Vegetable oil — 100 ml
• Onion — 500 g
• Carrot — 500 g
• Salt — 1 tbsp
• Cumin (zira) — 1 tsp
• Garlic — 50 g
• Boiled chickpeas — 200 g
• Raisins — 50 g
• Barberries — 10 g
• Chili peppers — 3 whole
• Pilaf rice — 1 kg
Instructions:
1. Cut the meat into small pieces and fry over high heat in vegetable oil until golden brown.
2. Transfer the meat to a separate bowl.
3. In the same pot, fry the onion (cut into thin slices).
4. Add the carrot (cut into thick strips) and cook together with the onion for about 5 minutes.
5. Return the meat to the pot. Add cumin and salt, mix well.
6. Add garlic, boiled chickpeas, raisins, and barberries. Stir everything thoroughly.
7. Add whole chili peppers and the washed rice.
8. Pour in water until it slightly covers the rice (1–2 cm above).
9. Cover with a lid, reduce the heat, and cook for 40–50 minutes.
10. Check if the rice is cooked, then remove from heat.
A hearty and flavorful dish is ready to be served!
