Slow country life in an old house. Summer is coming to an end, which means that now is the time to preserve and prepare vegetables from the garden. It is also the time to do autumn sewing and prepare the house for the cozy autumn.

🥦🧄🥒 Pickled vegetables "Vegetable assortment"
Everything is as usual: thoroughly wash the vegetables and greens, cucumbers can be pre-soaked. Place the spices, vegetables and greens in sterile jars (I put dill umbrellas, currant leaves, cherries, horseradish, garlic, allspice peas, bay leaf, cloves if desired).
Pour boiling water over the vegetables in the jars, close with sterile lids and leave for 10-20 minutes. Then drain all the water into a saucepan, bring to a boil and pour the vegetables again. Repeat several times. Then prepare the brine from this water. Calculate the proportions based on your volume.
Pour in the brine, screw on the lids, turn over and leave until cool (jars with screw caps do not need to be turned over).
The second option: immediately pour the brine over the vegetables and sterilize for 15 minutes. Roll up the lids, wrap them in a towel and leave until cool. This option is safer and faster.
Brine:
1.5 l of water;
160 g of sugar;
60 g of salt (coarse);
60 g of 9% vinegar;
Pour in the brine, screw on the lids, turn over and leave until cool.
